Vegetable Curry Recipes

Ingredients:
Paneer cubes, 1 cup
Flakes, frosted, 1 cup
Peanut butter or low fat butter, 1/2 cup
Oniom, 2 chopped
Tomato Puree, 2 Tbsp
Garlic paste, 1 tsp
Ginger paste, 1 tsp
Green chilies, chopped, 2 tsp
Lemon/lime juice, 1 tsp
Low fat butter/oil, 2 tsp
Turmeric powder, 1/2 tsp
Coriander leaves, chopped, 1 Tbsp
Salt to taste
Javitri, 1/8 tsp
Cinnamon sticks, 1-2 big size
Cardamom powder, 5
Bay leaves, 3-4
Preparation:
Put paneer cubes in warm water with turmeric powder (1/4 tsp), salt and lemon juice. Drain water and mix with garlic and ginger paste.
Heat a non-stick frying pan and add butter/oil. Add onion and fry until golden brown. Add cinnamon sticks, bay leaves, cardamom pods, and javitri, green chillies, tomato paste, turmeric powder, and salt and fry for 1/2 minute.
Add paneer cubes and 2 cup water. Cook until most of the water evaporates. Garnish with coriander leaves.

Spicy Paneer

Preparation time: 20 minute
Ingredients:
Paneer (Cottage Cheese) , 1 cup mashed
Onion, 1 chopped
Green chilli, 1 chopped
Coriander leaves, chopped, 1 Tbsp
Oil for frying, 1 tsp
Salt to taste
Red chilli powder, 1/2 tsp
Turmeric powder, 1/8 tsp
Coriander powder, 1 tsp
Lime/lemon juice, 1/2 tsp
Preparation:
Heat oil in a non stick pan. Add onion and cook for 3-4 minutes. Add all the spices and stir for 2 minutes.
Add paneer and mix well. Garnish with coriander leaves.
Serve with naan, roti, bread or use as a filling in sandwich.
