The khakhara recipe is a very nutritious and healthy dish with all the benefits of whole-grains. It is a good breakfast dish and even as a main dish in meals. It is good for stomach and also as ill/sick people diet.

Khakhara


Recipe type: Fat free, cholesterol free
Preparation time: 30 minute
Ingredients:
  • Roti, fresh or leftover, small pieces, 2
  • Mung dal (with skin), 1 cup
  • Rice, 1/2 cup
  • Green peas, fresh or frozen, 1/2 cup
  • Water, 4 cup
  • Onion, finely chopped, 1 cup
  • Lime/lemon juice, fresh, 2 tsp
  • Coriander leaves, finely chopped, 1 Tbsp
  • Green Chilies, finely chopped, 1 Tbsp
  • Ginger, 1 inch root, finely chopped
  • Spices:
    1. Red Chili powder, 1 tsp
    2. Coriander powder, 1 tsp
    3. Garam masala, 1/2 tsp
    4. Hing, a small grain or powder (optional)
    5. Cumin seeds, 1 tsp
    6. Turmeric powder, 1/2 tsp
    7. Salt to taste
Preparation
  1. In a pressure cooker, add all the ingredients (except roti, coriander, oinion and peas) and put on high heat. When the pressure is about to come, slow down the heat and cook for 15 minutes.
  2. Remove from heat and add roti pieces and peas. Cover and keep for 5 minutes.
  3. Garnish with onion, coriander, and lemon juice.
Serve hot with yogurt or any cooked vegetable.

Tips:

The consistency of khakhara should not be too thin, it should be like that of a very very thick ketchup.

It is a good idea not to allow the cooker to whistle. When you feel that the cooker is about to whistle, slow down the heat. This way the ingredients will not fly away with the release of steam. This method although takes a slightly longer time but you will save a lot cleaning time. Also it is a silent way of cooking, not disturbing to older people and children sleeping as well.

You can use any left-over rotis.
